Clam Sauce
Ingredients
- 1 (10 ounce) can baby clams drained and juice reserved
- 3 Tablespoons butter
- 2 cloves garlic, minced
- 3 Tablespoons flour
- 1 (4 ounce) can mushrooms (pieces and stems), drained
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 1/2 cup clam juice or clam juice and water or clam juice and milk etc.
- 2 Tablespoons fresh parsley (chopped)
Directions
Sauté garlic in butter until translucent (about 1 minute).
add flour and cook until smooth and bubbly. Add mushrooms and cook until hot.
Remove from heat.
Add black pepper, oregano salt and clam juice or alternative. Return
to heat.
Bring to a boil stirring constantly. Boil for 1 minute,. Add clams and
parsley. Cook until heated through.
